Peri Peri Wrap

This Portuguese-inspired wrap has become our most requested lunch item, delivering a perfect balance of heat and flavour that keeps customers coming back. We marinate our chicken in authentic peri peri spices for maximum flavour penetration, then wrap it with crisp vegetables and cooling sauces. The secret is in the double-wrap technique – using a thin layer of garlic mayo to seal the tortilla before adding the filling, preventing any soggy disasters.

2 Servings
  • 2 large flour tortillas
  • 400g chicken breast
  • sliced 3 tbsp peri peri sauce (plus extra for serving)
  • 1 red pepper
  • sliced 1 red onion
  • sliced 100g mixed salad leaves 2 tbsp garlic mayonnaise
  • 1 tbsp olive oil
  • Salt and pepper to taste

Step 1: Heat olive oil in a large pan over medium-high heat. Season chicken with salt and pepper, then cook for 6-8 minutes until golden and cooked through.

Step 2: Add sliced peppers and onions to the pan. Cook for 3-4 minutes until slightly softened but still with bite.

Step 3: Pour peri peri sauce over chicken and vegetables. Toss to coat evenly and cook for another 2 minutes until sauce is heated through.

Step 4: Warm tortillas in a dry pan for 30 seconds each side. Spread a thin layer of garlic mayonnaise across each tortilla, leaving a 2cm border.

Step 5: Add salad leaves to the centre of each wrap, top with the hot peri peri chicken mixture.

Step 6: Fold the bottom edge up, fold in the sides, then roll tightly from bottom to top. Slice in half diagonally and serve immediately with extra peri peri sauce on the side.
